INGREDIENTS:
3/4 cup Olive Oil
1 cup Packed Brown Sugar
1/2 cup Stevia (Or other low calorie sweetener)
1 Tsp Baking Powder
1/4 Tsp Baking Soda
2 Eggs
1 Tsp Vanilla
1 3/4 c Whole Wheat Flour
2 cups Rolled Oats (not quick oats)
DIRECTIONS:
Beat in as much flour as you can with your mixer. Mine can hold all of the flour.. but if yours can't, don't worry about it! Just get your wooden spoon out and start mixing by hand!
Now add the oats, and with a wooden spoon stir them in. Go ahead and get a cup or so of warm water. The batter is very dry at this point. After all the oats are stirred in.. dump as many raisins as you would like in your cookies.
Oil your pans, and preheat the oven to 375 degrees
Use a spoon to scoop a ball of cookie dough 1 inch or so apart from each other on the cookie dough pans.
Bake for 10 minutes.. Feel cookies to see if they are completely baked thoroughly. If they are not.. put them in for another 3-5 minutes.
