Bloggers Get Cookin' - Chicken, Lettuce, Quinoa wraps

Today is the day! The BLOGGERS GET COOKIN' ON PINTEREST LINKUP IS LIVE! WOOOO!

I partnered up with Katie of Chic in Carollina to co-host this linkup for bloggers to get a chance to cook up something that they had pinned on Pinterest, but never got around to making. For the linkup, I made Chicken, Lettuce, Quinoa wraps.. I also made a bunch of other stuff so stay tuned for other recipes to also go live today! Here's the pin that inspired me...


For the chicken: 

2 large boneless, skinless chicken breasts grilled and thinly sliced

2 tablespoons of Olive Oil

3 tablespoons of soy sauce

For the wraps:

2 Heads of lettuce (boston, bib, or butter) 

2 1/2 cups of cooked quinoa

1-3 cucumbers thinly sliced

1-2 large carrots thinly sliced

*The recipe is for this super peanut dipping sauce to go on top... I didn't make that part. We just used some greek vinaigrette dressing

DIRECTIONS

Make sure your chicken is grilled in advance.. That'll make things go a lot faster, believe me.

- In a small bowl stir together the Olive oil and soy sauce. Place chicken in a medium size bowl, add the mixture, and coat the chicken evenly. Place in refrigerator for 20 minutes. Prepare your quinoa in the meantime. 

The ratio is ¾ cup dry quinoa to 1½ cups of water. Since you need to make 2 1/2 cups of quinoa... You need like 4 1/2 cups of water.. My math isn't great, but with quinoa, it will absorb as much water as possible, and little white things will pop up with the quinoa is ready. Check the bag of the quinoa for how long to cook. 

How to Serve:

Place lettuce, cucumber, carrot, and cilantro sprigs on a platter. Add your bowls of quinoa and chicken to the platter, you can put the dressing on their too. 

Start with the lettuce leaf, add a bunch of quinoa (you'll have plenty to go around I promise), a strip or two of chicken, and some veggies. You can either wrap up the lettuce with all ingredients in it, or have a lettuce bowl as shown in my picture. 

My family finds these SUPER delicious, and they're fairly easy to make too!
